Haselgrove Wines Protector Cabernet Sauvignon is sourced from a selection of McLaren Vale vineyards across various mesoclimates. Each produces fruit with distinct character.
Keeping each parcel separate, the fruit is destemmed into open fermenters and the whole berries are cold soaked. The fermenting juice is plunged three times daily for 8-10 days, then is pressed to barrel to complete fermentation.
The wine undergoes malolactic fermentation in a mix of new and seasoned French oak, followed by 16 months of maturation. It is then blended and bottled.
Bright garnet, Haselgrove Wines Protector Cabernet Sauvignon is full bodied with silky dark fruit flavours, integrated oak and a firm tannin framework providing structure.
The Celts believed the hazel tree protected them against evil spirits, similar to how Cabernet tannins protect the wine as it ages. Cellaring potential is 10 years.
